2-Aminoacetophenon ist eine der Leitsubstanzen für den „Foxton" oder den „untypischen Alterungston" (UTA) im Wein. Der Foxton ist eine meist als negativ empfundene Geschmacksprägung bestimmter Amerikaner-Reben, der seinen Namen der Ähnlichkeit mit dem Geruch eines Fuchsbaus verdankt.

Als Abbauprodukt der Indolessigsäure ist 2-Aminoacetophenon ab ca. 0,5 µg/l für den „untypischen Alterungston" verantwortlich. Ab dieser Konzentration wird der Wein stumpf und verliert bei höheren Gehalten seine Sortentypizität vollends. Der Geruch erinnert an nasse Pappe, müffelnde Putzlappen und Mottenkugeln. Das Vorliegen dieses Weinfehlers weist auf Nährstoffmangel und/oder Trockenstress der Reben hin.

2-Aminoacetophenone is one of the key indicator compounds for the "foxy taint" or the "untypical ageing off-flavour" (UAO) in wine. The foxy taint is a mostly negative flavour characteristic of certain American hybrid vines, named after its resemblance to the smell of a fox's den.

As a degradation product of indole-3-acetic acid, 2-aminoacetophenone is responsible for the "untypical ageing off-flavour" from approximately 0.5 µg/l. From this concentration the wine becomes dull and at higher levels loses its varietal typicity entirely. The smell is reminiscent of wet cardboard, musty cleaning cloths and mothballs. The presence of this wine fault indicates nutrient deficiency and/or drought stress in the vines.

4-Ethylphenol und 4-Ethylguajacol sind verantwortlich für einen Weinfehler, der durch den Hefepilz Brettanomyces bruxellensis verursacht wird und an den Geruch von Pferdeschweiß erinnert. Da diese Hefen vorrangig in den Poren von Barriquefässern siedeln, sind hauptsächlich Rotweine betroffen.

Die Wahrnehmungsschwelle von 4-Ethylphenol liegt bei 440 µg/l; es hat als Einzelsubstanz einen medizinisch-stechenden Geruch. 4-Ethylguajacol (Geruch: geräucherter Speck) kommt in deutlich geringeren Konzentrationen vor, wird aber aufgrund seiner höheren Flüchtigkeit trotzdem wahrgenommen. Die charakteristische Pferdeschweiß-Assoziation entsteht erst durch die Kombination beider Substanzen.

4-Ethylphenol and 4-ethylguaiacol are responsible for a wine fault caused by the yeast Brettanomyces bruxellensis, which recalls the smell of horse sweat. Since these yeasts primarily inhabit the pores of barrique barrels, red wines are mainly affected.

The perception threshold of 4-ethylphenol is 440 µg/l; as a single compound it has a medicinal, pungent odour. 4-Ethylguaiacol (smell: smoked bacon) occurs at considerably lower concentrations but is nevertheless perceived due to its higher volatility. The characteristic horse sweat association only arises from the combination of both compounds.

Der Nachweis von E 150c und E 150 d in Lebensmitteln erfolgt über das als Nebenprodukt entstandene 4-Methylimidazol.

4-Methylimidazole (4-MEI) is formed in the Maillard reaction during the browning of protein-containing foods and in the production of ammonia caramel (E 150c) and ammonium sulfite caramel (E 150d). E 150c and E 150d are detected in foods via the 4-methylimidazole produced as a byproduct.

Acetaldehyd ist eine Vorstufe des Ethanols bei der alkoholischen Gärung und eine Zwischenstufe beim Abbau von Alkohol im menschlichen Körper. Es ist eine flüchtige Substanz mit stechendem, charakteristischem Geruch, der den typischen Sherry-Geruch dominiert. In anderen Weinen gilt dieser Geruch als Weinfehler (Altersfirne, Luftton, oxidative Note).

Acetaldehyd reagiert mit Sulfit (SO₂), sodass ein Teil des Schwefels im Wein als gebundenes Acetaldehyd vorliegt und sensorisch nicht mehr wahrnehmbar ist. Da diese Bindung einen Teil des Sulfits verbraucht, steht dieser nicht mehr für den Oxidationsschutz zur Verfügung. Bei Destillaten dient der Acetaldehydgehalt als Indikator der Güte der Vorlaufabtrennung.

Acetaldehyde is a precursor of ethanol in alcoholic fermentation and an intermediate in the breakdown of alcohol in the human body. It is a volatile substance with a pungent, characteristic smell that dominates the typical Sherry aroma. In other wines this smell is considered a wine fault (premature ageing, oxidative note).

Acetaldehyde reacts with sulphite (SO₂), so that part of the sulphur in wine is present as bound acetaldehyde and is no longer sensorially perceptible. As this binding consumes part of the sulphite, it is no longer available for oxidation protection. In distillates, the acetaldehyde content serves as an indicator of the quality of foreshot separation.

Acrolein (Propenal, Acrylaldehyd, 2-Propenal) entsteht beim Überhitzen von Fetten und hat einen stechenden Geruch und bitteren Geschmack. Im Wein kann Acrolein durch Abbau des Glycerins durch Milchsäurebakterien entstehen; oft geht damit eine Trübung und Bildung von Bodensätzen einher. Wahrnehmbare Konzentrationen gelten als Weinfehler.

Alternativ kann Acrolein beim Brennvorgang aus 3-Hydroxypropanal entstehen und daher Inhaltsstoff von Spirituosen sein.

Acrolein (propenal, acrylaldehyde, 2-propenal) is formed when fats are overheated and has a pungent smell and bitter taste. In wine, acrolein can form through the degradation of glycerol by lactic acid bacteria; this is often accompanied by turbidity and sediment formation. Perceptible concentrations are considered a wine fault.

Alternatively, acrolein can form during distillation from 3-hydroxypropanal and may therefore be a constituent of spirits.

Albumine

Genauso wie Casein zählt Albumin ebenfalls als allergieauslösender Stoff, der als Protein beispielsweise im Ei vorkommt. Aufgrund des allergenen Potenzials ist dieser auf Lebensmitteln zu kennzeichnen, sofern der Gehalt im Endprodukt 0,25 mg/L übersteigt.

Im Wein kann Albumin wie auch Casein aus Weinbehandlungsmitteln, die zur Geschmacksschönung eingesetzt werden, vorkommen. Anwendung findet Albumin zum großen Teil bei Rotweinen zur Reduzierung des Gerbstoffgehaltes; dabei werden die Anthocyangruppen gebunden, diese Behandlung macht den Wein weicher und entfärbt ihn etwas.

In anderen Produkten kann ebenfalls Albumin vorkommen, das beispielsweise durch Behandlungsmittel in das Produkt gelangt ist. Um sicherzustellen, ob eine Allergenkennzeichnung notwendig ist bzw. auf diese verzichtet werden kann, ist die Analyse von Albumin empfehlenswert.

Like casein, albumin is also an allergy-triggering substance that occurs as a protein in, for example, eggs. Due to its allergenic potential, it must be declared on foodstuffs if the content in the final product exceeds 0.25 mg/L.

In wine, albumin can, like casein, originate from wine treatment agents used for sensory improvement. Albumin is used predominantly in red wines to reduce tannin levels; it binds the anthocyanin groups, making the wine softer and slightly reducing its colour intensity.

Albumin can also occur in other products where it has entered through treatment agents. To determine whether allergen labelling is required or can be dispensed with, analysis of albumin is recommended.

Casein / Kasein

Caseine

Caseine als Proteine der Milch können Allergien auslösen, sodass diese ab einem Gehalt von 0,25 mg/L im Enderzeugnis als Allergene auf Lebensmitteln zu kennzeichnen sind. Neben tatsächlich milchhaltigen Produkten kann Casein auch in anderen Lebensmitteln vorkommen, wo es beispielsweise durch Behandlungsmittel oder Zusatzstoffe eingetragen wurde.

So kann Casein bei Weinen als traditionelles Weinbehandlungsmittel zur Entfernung unerwünschter Gerbstoffe zum Einsatz kommen. Vor allem bei Weißweinen, die eine hohe mechanische Belastung – beispielsweise während des Pressens – erfahren haben, können hohe Gehalte an Gerbstoffen enthalten sein, die anschließend kellertechnisch mithilfe von Casein entfernt werden können.

Neben dem Nachweis dieses Allergens im Wein kann durch die ELISA-Methode Casein auch in vielen anderen Produkten nachgewiesen werden, sodass sichergestellt werden kann, dass keine Allergenkennzeichnung notwendig ist bzw. dass die Allergenkennzeichnung unverzichtbar angebracht werden muss.

Caseins, as milk proteins, can trigger allergies and must therefore be declared as allergens on foodstuffs if the content in the final product reaches or exceeds 0.25 mg/L. In addition to genuinely milk-containing products, casein can also be present in other foodstuffs where it has been introduced, for example, through treatment agents or additives.

Lysozym

Lysozym ist ein aus Hühnereiweiß gewonnenes Enzym, welches wie auch Casein und Albumin unter die Deklarationspflicht allergener Inhaltsstoffe fällt.

Im Wein darf Lysozym seit Herbst 2001 als Weinbehandlungsmittel eingesetzt werden – zur Steuerung des biologischen Säureabbaus bei gärenden Mosten und Jungweinen oder bei Verschnitt- und Süßungsvorgängen zur Stabilisierung. Das Enzym zersetzt die Zellwand grammpositiver Bakterien (z. B. Milchsäurebakterien), sodass diese keine Wirkung mehr entfalten können. Andere Bakterien und Hefen werden jedoch nicht beeinflusst, sodass beispielsweise die alkoholische Gärung nicht behindert wird.

Auch in anderen Produkten ist der Einsatz von Lysozym zur Bekämpfung grammpositiver Bakterien denkbar, sodass auch auf diesen Produkten eine Allergenkennzeichnung notwendig wird, sobald der Gehalt an Lysozym im Endprodukt 0,25 mg/L übersteigt.

Lysozyme is an enzyme derived from hen egg white that, like casein and albumin, falls under the mandatory declaration requirements for allergenic ingredients.

In wine, lysozyme has been permitted as a wine treatment agent since autumn 2001 – for controlling malolactic fermentation in fermenting musts and young wines, or during blending and sweetening operations for stabilisation purposes. The enzyme breaks down the cell wall of Gram-positive bacteria (e.g. lactic acid bacteria), rendering them inactive. Other bacteria and yeasts are not affected, so that, for example, alcoholic fermentation is not impeded.

The use of lysozyme to combat Gram-positive bacteria is also conceivable in other products, meaning that allergen labelling also becomes necessary for such products as soon as the lysozyme content in the final product exceeds 0.25 mg/L.

Unter Aminosäuren versteht man eine Gruppe von Substanzen, die einerseits eine Carbonsäure und andererseits ein Amin sind. Zu ihren bedeutendsten Aufgaben gehört ihre Funktion als Baustein der Proteine. Von diesen proteinogenen Aminosäuren werden die folgenden von uns untersucht:

Prolin

Proline

Prolin, genauer gesagt L-Prolin, ist eine für den Menschen nicht-essentielle proteinogene Aminosäure, d. h. der menschliche Organismus benötigt diese Aminosäure zwar, kann diese aber selbst herstellen und muss sie nicht zwingend über die Nahrung aufnehmen.

Die Aminosäure Prolin ist zusammen mit anderen Aminosäuren Bestandteil des Traubenmostes, stellt aber im Gegensatz zu diesen keine Stickstoffquelle für Hefen dar und wird kaum von diesen verstoffwechselt. Daher ist die Konzentration an Prolin im Wein deutlich höher als die der meisten anderen Aminosäuren. Da die Ausgangskonzentration des Prolins im Most stark von Klima und Reife der Trauben abhängig ist, stellt Prolin einen guten Indikator für die Reife der Trauben dar.

Außerdem gehören zu den proteinogenen Aminosäuren noch: Alanin, Arginin, Asparagin, Asparaginsäure, Cystein, Glutamin, Glutaminsäure, Glycin, Histidin, Isoleucin, Leucin, Lysin, Methionin, Phenylalanin, Serin, Threonin, Tryptophan, Tyrosin und Valin.

Da die meisten dieser Aminosäuren – mit Ausnahme des Prolins – zwar im Traubenmost und in Fruchtsäften vorkommen, aber bei der Gärung von Hefen verstoffwechselt werden können, sind ihre Gehalte im Wein sehr gering.

Weitere wichtige nicht-proteinogene Aminosäuren sind γ-Aminobuttersäure (GABA) und Ornithin. Zudem können Bakterien Aminosäuren zu biogenen Aminen abbauen.

Proline, more precisely L-proline, is a non-essential proteinogenic amino acid for humans, meaning that the human organism requires this amino acid but is able to synthesise it itself and does not necessarily have to obtain it through food.

The amino acid proline is, together with other amino acids, a constituent of grape must; however, unlike the others, it does not serve as a nitrogen source for yeasts and is barely metabolised by them. As a result, the concentration of proline in wine is significantly higher than that of most other amino acids. Since the initial concentration of proline in must depends strongly on the climate and ripeness of the grapes, proline is a reliable indicator of grape maturity.

Further proteinogenic amino acids that can be determined include: alanine, arginine, asparagine, aspartic acid, cysteine, glutamine, glutamic acid, glycine, histidine, isoleucine, leucine, lysine, methionine, phenylalanine, serine, threonine, tryptophan, tyrosine and valine.

Since most of these amino acids – with the exception of proline – are present in grape must and fruit juices but can be metabolised by yeasts during fermentation, their levels in wine are very low.

Further important non-proteinogenic amino acids are γ-aminobutyric acid (GABA) and ornithine. In addition, bacteria can degrade amino acids into biogenic amines.

Anethol ist die Leitsubstanz des Anisaromas, kommt aber natürlich auch in anderen ätherischen Ölen vor. Für anishaltige Spirituosen (z.B. Anisée, Anisette, Ouzo, Pernod, Raki) dient die Methode der Grenzwertkontrolle.

Negativ geladene Ionen wandern bei einer Elektrolyse zur Anode (dem Pluspol), sodass für sie der Name Anion gewählt wurde. Anionen entstehen aus Atomen bzw. Molekülen durch Elektronenaufnahme. Anionen dienen, wie auch Kationen, den Pflanzen als Mineralstoffe und Spurenelemente, sodass diese in typischen Zusammensetzungen in den jeweiligen Produkten vorkommen. Aus dem Gehalt an Anionen und Kationen lässt sich der Gehalt an Asche berechnen sowie eine Bewertung der Inhaltsstoffe und somit der Qualität eines Produktes durchführen. Durch technische Veränderungen des Produktes oder auch durch Zugabe von Wasser verändert sich die Mineralstoffzusammensetzung, sodass solche Veränderungen sich durch die Analyse der Anionen wie auch der Kationen nachweisen lassen.

Negatively charged ions migrate towards the anode (the positive pole) during electrolysis, which is why they are called anions. Anions are formed from atoms or molecules by electron uptake. Like cations, anions serve plants as minerals and trace elements and therefore occur in product-typical compositions. The ash content can be calculated from the levels of anions and cations, and the composition of these minerals allows an assessment of product quality. Technical alterations to a product or the addition of water change the mineral composition, meaning that such modifications can be detected through the analysis of anions as well as cations.

Chlorid

Der Chloridgehalt liegt bei handelsüblichen Weinen zwischen 10 und 100 mg/L, wobei auch höhere Konzentrationen bei Weinen aus Meereesnähe auftreten können. Bei nicht meeresnahen Weinen sind hohe Chloridgehalte auf Verunreinigungen oder unerlaubten Zusatz von Kochsalz zurückzuführen. Bei Fruchtsäften kommen ebenfalls nur geringe Gehalte an Chlorid vor, wobei auch hier ein Einfluss des Meeres eine Rolle spielen kann. Auch für die Qualität und den Geschmack eines Bieres spielt Chlorid eine wichtige Rolle, da es die Vollmundigkeit des Bieres beeinflussen kann, in zu großen Mengen jedoch auch zu einem salzigen Geschmack führen kann.

The chloride content in commercially available wines ranges between 10 and 100 mg/L, although higher concentrations can occur in wines from coastal areas. In wines from non-coastal regions, elevated chloride levels are attributable to contamination or the illicit addition of table salt. Fruit juices also naturally contain only low chloride levels, where coastal influence can likewise play a role. In beer, chloride also has an important influence on quality and flavour: it can enhance the fullness of the beer, but in excessive quantities can also lead to a salty taste.

Fluorid

Der durchschnittliche Gehalt an Fluor liegt bei deutschen Weinen bei 0,12 mg/L. In Deutschland sind zwei Grenzwerte für Wein festgelegt: Für Weine aus nicht mit Kryolith behandelten Rebpflanzungen gilt ein Grenzwert von 1 mg/L, wohingegen Weine aus mit Kryolith behandelten Rebpflanzungen einem Grenzwert von 3 mg/L unterliegen.

The average fluoride content in German wines is 0.12 mg/L. Two limit values are established for wine in Germany: for wines from vineyards not treated with cryolite, the limit is 1 mg/L, whereas wines from cryolite-treated vineyards are subject to a limit of 3 mg/L.

Nitrat

Nitrate sind als Stickstoffverbindungen in gewissen Mengen für das Wachstum und die Gärung notwendig. Sie spielen eine wichtige Rolle beim Wachstum der Pflanze; jedoch darf auch nicht zu viel Nitrat eingesetzt werden, denn dann reagiert die Rebe mit Krankheitserscheinungen oder es entsteht später im Wein zusammen mit anderen Faktoren die „Untypische Alterungsnote“. Eine gewisse Menge Nitrat als hefeverwertbarer Stickstoff ist dennoch für den Gärverlauf wichtig. Bei Fruchtsäften kommen normalerweise nur geringe Gehalte an Nitrat vor, sodass deutlich erhöhte Gehalte auf Fremdzusatz – beispielsweise aus Trinkwasser – hindeuten. Im Bier können hohe Nitratgehalte während des Brauprozesses zu Nitrit umgesetzt werden, was stark hemmende Wirkungen auf die Hefe hätte; hohe Nitratgehalte im Bier bzw. im Brauwasser sind daher zu vermeiden.

Nitrates, as nitrogen compounds, are necessary in certain quantities for plant growth and fermentation. They play an important role in vine growth; however, excessive nitrate application can cause disease symptoms in the vine or, together with other factors, lead to the formation of an „Untypical Ageing Note“ in the resulting wine. A certain amount of nitrate as yeast-assimilable nitrogen is nevertheless important for the fermentation process. Fruit juices naturally contain only low nitrate levels, so significantly elevated values indicate the addition of extraneous water, for example from tap water. In beer, high nitrate levels can be converted to nitrite during the brewing process, which would have a strongly inhibitory effect on yeast; high nitrate levels in beer or brewing water should therefore be avoided.

Phosphat

Im Wein kommt sowohl organisches als auch anorganisches Phosphat vor. Je nach Qualität, Herkunft sowie Jahrgang liegen die Gehalte zwischen 100 und 1.000 mg/L. Im Wein kann es zu erhöhten Phosphatgehalten kommen aufgrund der erlaubten Zugabe des Nährsalzes Diammoniumphosphat zu frischen Weintrauben, Traubenmost bzw. teilweise gegorenem Traubenmost. Das Nährsalz darf bis zu einem Grenzwert von 1 g/L verwendet werden, was einem Gehalt von 725 mg/L Phosphat entspricht. Erhöhte Phosphatgehalte in Fruchtsäften können auf Streckung der Säfte mit Wasser oder auf Zusatz von Phosphatverbindungen hindeuten und sind außerdem meist mit hohen Aschegehalten verbunden.

Anthocyanins are reddish to bluish secondary plant pigments formed in the grape skin during ripening as sun protection. During red wine production they must be extracted from the berry skin. The colour of a red wine is additionally determined by its pH value.

The determination of the anthocyanin spectrum captures the percentage shares of individual anthocyanins (incl. cyanidin-3-glucoside, petunidin-3-glucoside, peonidin-3-glucoside, malvidin-3-acetyl-glucoside). As the distribution is variety-specific, grape variety blending and adulteration can be detected.

Safrol ist ein anisartig riechender Aromastoff, der in hohen Konzentrationen im nordamerikanischen Sassafrasröl und im asiatischen Öl des Kampferbaums vorkommt. In wesentlich geringeren Konzentrationen kommt Safrol aber auch in schwarzem Pfeffer und Muskatnüssen vor. Aufgrund der nieren- und leberschädigenden Wirkung ist Safrol in der EU nicht als Lebensmittelzusatzstoff zugelassen. Für Lebensmittel mit einem natürlichen Vorkommen existieren entsprechende Grenzwerte.

Isosafrol ist ein Isomer des Safrols, das beispielsweise in einigen ätherischen Ölen von Lorbeer- und Muskatnussgewächsen zusammen mit Safrol vorkommt. Der Geruch des Isosafrols ist schwächer als der des Safrols und erinnert an Lakritze oder Anis.

Safrole is an anise-scented aroma compound found in high concentrations in North American sassafras oil and Asian camphor tree oil. However, safrole also occurs in substantially lower concentrations in black pepper and nutmeg. Due to its nephrotoxic and hepatotoxic effects, safrole is not approved as a food additive in the EU. Isosafrole is an isomer of safrole that occurs together with safrole in, for example, certain essential oils of laurel and nutmeg plants. The smell of isosafrole is weaker than that of safrole and is reminiscent of liquorice or anise.

α- und β-Thujon sind Inhaltsstoffe von Wermut, Thymian, Rosmarin, Beifuß und echtem Salbei. Daher enthält beispielsweise Absinth natürliche Mengen der Thujone. In der EU sind die maximal zulässigen Thujon-Gehalte in Lebensmitteln begrenzt, da es sich bei diesen Substanzen um Nervengifte handelt, die in hoher Dosierung zu epileptischen Krämpfen und Verwirrtheit führen können. Bei der Kontrolle der Einhaltung der Grenzwerte muss zwischen alkoholischen und nicht-alkoholischen Getränken unterschieden werden. Außerdem ist zu beachten, ob das alkoholische Getränk aus Artemisia-Arten hergestellt wurde, da für diese Getränke aufgrund der natürlichen Gehalte höhere Grenzwerte existieren.

α- and β-thujone are constituents of wormwood, thyme, rosemary, mugwort and common sage. Absinthe, for example, therefore naturally contains thujones. The maximum permitted thujone levels in foodstuffs are restricted in the EU, as these substances are neurotoxins that can cause epileptic convulsions and confusion at high doses. When checking compliance with the limit values, a distinction must be made between alcoholic and non-alcoholic beverages. It must also be noted whether the alcoholic beverage was produced from Artemisia species, as higher limit values exist for such beverages due to their naturally occurring levels.

Ash is the totality of substances remaining after ashing the evaporation residue – mainly alkali and alkaline earth metals (potassium, calcium, magnesium, sodium) as well as phosphorus and trace elements. The ash content in wine is typically 1.3–3.5 g/l and depends strongly on the water balance of the vine and the mineral composition of the soil.

Histamin entsteht durch Abbau von Histidin durch Milchsäurebakterien – begünstigt durch faules Lesegut und mangelnde Hygiene. Allergiker reagieren ab 2 mg/l mit Kopfschmerzen bis Atemnot. Phenylethylamin (aus Phenylalanin) und Tyramin (aus Tyrosin) erhöhen den Blutdruck und können Migräne auslösen. Tyramin wird im Wesentlichen während der malolaktischen Gärung gebildet.

Biogenic amines are formed by bacterial decarboxylation of amino acids and can cause intolerance reactions. Histamine is formed from histidine by lactic acid bacteria – favoured by mouldy harvests and poor hygiene. Allergy sufferers react from 2 mg/l with headaches to breathing difficulties. Phenylethylamine (from phenylalanine) and tyramine (from tyrosine) raise blood pressure and can trigger migraines.

Histamin ist eine Stickstoffverbindung mit allergener Wirkung. Im Wein entsteht diese Substanz durch den Abbau von Histidin zu Histamin und Kohlendioxid, wobei die Bildung dieser Verbindung durch spontan anlaufende Maischegärungen oder einen biologischen Säureabbau unter Beteiligung von Milchsäurebakterien in Gang kommen kann. Begünstigt wird die Entstehung durch faules Lesegut sowie unsauberes Arbeiten, wobei Rotweine tendenziell höhere Histamin-Gehalte aufweisen als Weißweine. Durch Bentonit-Behandlung des Weines kann das Amin zu mehr als 90 % entfernt werden; bei Rotweinen führt diese Behandlung jedoch zu empfindlichen Farbverlusten.

Ein Grenzwert für Histamin in Wein existiert in der Europäischen Union derzeit nicht. Bis 2010 hatte die Schweiz einen Grenzwert von 10 mg/L. Allergiker können jedoch schon ab 2 mg/L mit Kopfschmerzen bis hin zu Atemnot, Schwindel und Juckreiz auf Histamin im Wein reagieren. Deshalb plant die EU, einen Grenzwert von 2 mg/L für Histamin einzuführen. Auch in anderen Gärungsprodukten wie Bier kann Histamin vorkommen, sodass die Verträglichkeit beeinflusst werden kann.

Histamine is a nitrogen compound with allergenic effects. In wine, this substance is formed by the degradation of histidine to histamine and carbon dioxide; the formation of this compound can be initiated by spontaneous mash fermentations or malolactic fermentation involving lactic acid bacteria. Its formation is favoured by mouldy harvest material and poor hygiene practices, with red wines tending to show higher histamine levels than white wines. Bentonite treatment of wine can remove more than 90 % of the amine; however, this treatment leads to considerable colour losses in red wines.

No limit value for histamine in wine currently exists in the European Union. Until 2010, Switzerland had a limit value of 10 mg/L. However, allergy sufferers can react to histamine in wine from as little as 2 mg/L with symptoms ranging from headaches to breathing difficulties, dizziness and itching. The EU is therefore planning to introduce a limit value of 2 mg/L for histamine. Histamine can also occur in other fermentation products such as beer, which can likewise affect tolerability.

Phenylethylamin, als ein weiteres biogenes Amin, wird durch Decarboxylierung der Aminosäure Phenylalanin gebildet. In den meisten Lebensmitteln sind die natürlich vorkommenden Gehalte sehr gering und steigen erst während der Fermentation und Reifung an. Dieses Amin verursacht einen Anstieg des Blutdrucks und wird ebenfalls als Auslöser von Migräne verdächtigt. Die Konzentration von Phenylethylamin in Weinen hängt von der Qualität des Leseguts ab: Je fauler das Lesegut, desto höher ist die zu erwartende Konzentration des Phenylethylamins im Wein.

Phenylethylamine, as a further biogenic amine, is formed by decarboxylation of the amino acid phenylalanine. In most foodstuffs, naturally occurring levels are very low and only increase during fermentation and maturation. This amine causes a rise in blood pressure and is also suspected of being a trigger for migraines. The concentration of phenylethylamine in wines depends on the quality of the harvest material: the more mouldy the harvest, the higher the expected concentration of phenylethylamine in the wine.

In Deutschland wird die Gesamtsäure bis zu einem pH-Wert von 7,0 titriert und als g Weinsäure je Liter Wein angegeben. Dahingegen wird diese in Frankreich als g Schwefelsäure je Liter Wein angegeben. Mit Hilfe von Umrechnungsfaktoren ist es jedoch möglich, die analytischen Daten aus Frankreich und Deutschland miteinander zu vergleichen:In Germany, total acidity is titrated up to a pH value of 7.0 and expressed as g tartaric acid per litre of wine. In France, however, it is expressed as g sulphuric acid per litre of wine. Using conversion factors, it is possible to compare analytical data from France and Germany:

In der Europäischen Union hat der Gesetzgeber einen Mindestgesamtsäuregehalt von 3,5 g/l berechnet als Weinsäure für den Wein festgelegt. Der Säuregehalt spielt für den Geschmack und die Haltbarkeit eines Weines eine wesentliche Rolle, wobei je nach Traubensorte, Lage und Jahrgang große Schwankungen vorliegen können. Kationen (Kalium, Calcium, Magnesium, Natrium, Eisen, Kupfer, Zink, Mangan u. a.) sind natürliche Bestandteile von Getränken; ihre Zusammensetzung ist typisch für Herkunft und Sorte. Schwermetalle (Blei, Cadmium, Arsen, Quecksilber) unterliegen strengen EU-Grenzwerten. Kupfer (aus Kupfersulfat-Behandlung) wird im Wein bis zu einem Grenzwert von 1 mg/l toleriert.

Cations (potassium, calcium, magnesium, sodium, iron, copper, zinc, manganese etc.) are natural constituents of beverages; their composition is typical of origin and variety. Heavy metals (lead, cadmium, arsenic, mercury) are subject to strict EU limits. Copper (from copper sulphate treatment) is tolerated in wine up to a limit of 1 mg/l.

Im Wein kommen natürlicherweise nur sehr geringe Gehalte an Aluminium vor, da ein Großteil des im Most vorkommenden Aluminiums mit dem Trub entfernt wird. Jedoch kann während der Weinbereitung durch andere Quellen wie Geräte und Behälter wieder Aluminium in den Wein eingetragen werden, sodass teilweise höhere Gehalte nachgewiesen werden können. Liegt ein deutlich erhöhter Gehalt vor, so kann dies zu Instabilitäten im Wein führen, sodass es zu Metalltrübungen kommen kann. Vom Gesetzgeber ist in Deutschland ein Höchstgehalt von 8 mg/L festgelegt worden.

Aluminium kann sich auch nachteilig auf die kolloidale Stabilität und den Geschmack von Bier auswirken. Das Metall kann aus Behältern, Leitungen und Dosen aufgenommen werden, sodass auch hier eine Kontrolle des Gehaltes meist sinnvoll ist. Aus diesem Grund existieren auch in manchen Ländern wie beispielsweise der Schweiz Grenzwerte für den Gehalt an Aluminium. Darüber hinaus kann es auch bei anderen Produkten wie Fruchtsäften zu einem Aluminiumeintrag während der Herstellung kommen.

Wine naturally contains very low levels of aluminium, as most of the aluminium present in must is removed with the lees. The metal can be taken up from containers, pipelines and cans, so monitoring of the content is generally advisable here too. Arsen wird von der Pflanze nur in Spuren aufgenommen, sodass auch im Most und Wein nur geringe Gehalte zu finden sind. Zu früheren Zeiten konnten erhöhte Werte an Arsen im Wein nachgewiesen werden, welche durch arsenhaltige Pflanzenschutzmittel oder arsenhaltige Behandlungsmittel eingetragen wurden. Aus diesem Grund gilt in Deutschland ein gesetzlicher Grenzwert von 0,10 mg/L.

Blei (Pb)

Aufgrund von früheren bleihaltigen Pflanzenschutzmitteln sowie bleihaltigen Abgasen findet man noch heute teilweise erhöhte Bleigehalte in Böden, was von der Rebe über die Wurzeln aufgenommen werden kann. Dies kann zu erhöhten Bleigehalten im Most führen, wobei der größte Teil des enthaltenen Bleis bei der Gärung und des nachfolgenden Abtrennens des Hefetrubs wieder ausgeschieden wird, sodass im fertigen Wein nur geringe Gehalte vorkommen.

In der EU gelten für Weinerzeugnisse folgende Grenzwerte: Weinlese 2001–2015: 0,20 mg/L; Weinlese 2016–2021: 0,15 mg/L; Weinlese ab 2022: 0,10 mg/L. Neben Wein gibt es laut EU-Gesetzgebung auch für Fruchtsäfte einen Grenzwert für Blei.

In Weintrauben kommen erhöhte Cadmiumgehalte in der Umgebung von starken Immissionsquellen vor. Elevated cadmium levels in wine grapes occur in the vicinity of strong emission sources. Bei zu hohen Gehalten an Calcium kann es zu Kristallausscheidungen kommen, sodass diese vor der Füllung entfernt oder stabilisiert werden müssen.

Neben Wein ist der Calciumgehalt auch in anderen Produkten wie Bier relevant, da dieser hier beispielsweise während der Gärung im Zusammenhang mit der Flockung der Hefe steht. Darüber hinaus kann es bei Bieren mit niedrigen Calciumgehalten aufgrund des CO₂-Gehaltes dazu kommen, dass Calcium aus kalkhaltigen Filtermaterialien herausgelöst wird, was anschließend unlösliche, kristalline Trübungen verursachen kann.

Calcium is an important nutrient for the vine, contributing to cell wall stability among other functions. Eine solche Kontamination ist auch bei anderen großtechnisch hergestellten Produkten wie Fruchtsäften oder Bieren im Rahmen der Qualitätssicherung relevant.

Chromium is present in trace amounts in grape must, although somewhat higher levels can sometimes be found in wine. This is attributable to chromium ingress during the production process, for example from storage tanks or equipment. Minor chromium inputs are negligible; however, older tanks in particular can introduce larger and therefore relevant quantities, meaning that such a product could be subject to complaint. Such contamination is also possible in other industrially produced products such as fruit juices or beers and is relevant within the scope of quality assurance.

Ein erhöhter Eisengehalt wirkt sich im Bier nachhaltig auf die kolloidale Stabilität, den Geschmack, den Schaum und die Gushing-Neigung aus.

Aus diesem Grund gibt es für Wein einen Grenzwert für Kupfer, wobei die Verwendung kupferhaltiger Weinbehandlungsmittel nochmals strenger geregelt ist.

Auch im Bier kann durch die Rohstoffe, aber auch durch Apparate und Leitungen Kupfer in das Produkt gelangen. Wie auch bei allen anderen Schwermetallionen wirkt sich Kupfer negativ auf die kolloidale Stabilität und den Geschmack des Bieres aus, sodass erhöhte Kupfergehalte zu vermeiden sind.

Sofern ein besonders niedriger Gehalt an Mineralstoffen wie Magnesium in einem Wein vorliegt, so gibt dies einen Hinweis auf Veränderung des Weines durch z. B. Ionenaustauscher oder Wässerung, sodass eine Bewertung der Natürlichkeit des Weines möglich ist. Auch bei anderen Produkten wie Fruchtsäften kann mithilfe des Gehaltes an Magnesium eine Bewertung der Natürlichkeit durchgeführt werden, um so Veränderungen wie Wässerung nachzuweisen.

Eine solche Einlagerung als Spurennährstoff kommt auch in vielen anderen Pflanzen vor, sodass auch in Fruchtsäften und Bieren von natürlicherweise geringen Mangangehalten ähnlich dem Wein auszugehen ist.

Für den Gehalt an freiem Natrium hat die OIV einen Maximalgehalt von 80 mg/L festgelegt. Fruchtsäfte weisen generell ebenfalls geringe Gehalte auf (<30 mg/L), wobei auch bei küstennahen Produkten erhöhte Werte möglich sind. Neben der Richtwertskontrolle und der Kontrolle der Natürlichkeit wird Natrium ebenfalls bei der Erstellung von Nährwerttabellen benötigt, da der Salzgehalt auf Basis des Natriumgehaltes berechnet wird.

Wines typically contain only small amounts of sodium (5 to 25 mg/L). Zink wird wie viele andere Kationen von der Pflanze aus dem Boden aufgenommen und eingelagert. Natürlicherweise kommen im Wein nur Spuren von Zinn vor, sodass bei erhöhten Werten von einem Zinneintrag durch zinnhaltige Geräte und Behälter auszugehen ist. Da erhöhte Zinngehalte zu einer Zinn-Eiweißtrübung führen können, sollte ein solcher Eintrag nach Möglichkeit verhindert werden. Für Wein regelt die WeinV in Deutschland den maximal erlaubten Gehalt. Im Bier kann Zinn durch Leitungen und Dosen aufgenommen werden und somit ebenfalls die kolloidale Stabilität negativ beeinflussen. In manchen Ländern wie der Schweiz existieren auch Grenzwerte für Zinngehalte im Bier. Da Zinn auch aus Dosen abgegeben werden kann, existiert in der EU ein spezieller Grenzwert für Zinngehalte in Dosengtränken, wobei hier neben Bier in Dosen auch Fruchtsäfte in Dosen zu berücksichtigen sind.

To adjust the color of food, many foods have appropriate colorings added. Die Fumarsäure ist ebenso wie die Bernsteinsäure eine Dicarbonsäure und wird biochemisch im Zitronensäurezyklus durch Oxidation der Bernsteinsäure hergestellt. Ihren Namen verdankt sie dem Gewöhnlichen Erdrauch, dessen lateinischer Name Fumaria officinalis lautet und der Fumarsäure in größeren Mengen enthält. Die Konzentration an Fumarsäure in Most und Wein ist hingegen wesentlich geringer und liegt im niedrigen mg/l-Bereich. Zudem kann Fumarsäure dem Wein zugesetzt werden um das Wachstum und die Aktivität von Milchsäurebakterien zu reduzieren und damit die malolaktische Gärung zu verhindern.Fumaric acid, like succinic acid, is a dicarboxylic acid and is biochemically produced in the citric acid cycle through the oxidation of succinic acid. It owes its name to the common fumitory (Fumaria officinalis), which contains significant amounts of fumaric acid. PFAS do not occur naturally and are used industrially in the production of water-repellent and breathable textiles, as additives to firefighting foam, and as emulsifiers. Because they are virtually non-biodegradable (i.e., persistent), they are considered long-lasting chemicals and accumulate in the tissues of humans and animals. PFAS are generally toxic, considered carcinogenic, and increased levels correlate with a rise in various diseases and developmental disorders. Da das Vorkommen der Whiskey-Lactone in Wein und Whiskey auf die Lagerung im Holzfass und die damit verbundene Extraktion zurückzuführen ist, kann die Analyse der Whiskey-Lactone Aufschluss über deren Herkunft geben, da im synthetischen Aroma in der Regel alle vier Quercus-Lactone vorkommen.

3-Methyloctano-1,4-lactone exists in four different stereoisomeric forms, which are perceived differently by the senses. The sensory impressions include a more or less pronounced coconut note, but can also be described as sweet, earthy/woody, or celery-like. Only two of the four Quercus lactones occur naturally in wood in significant quantities. Since the presence of whiskey lactones in wine and whiskey is due to aging in wooden barrels and the associated extraction, the analysis of whiskey lactones can provide information about their origin, as synthetic flavorings typically contain all four Quercus lactones.

Resveratrol is considered cardioprotective and is being researched for further health-promoting properties.

Die im Wein enthaltene Weinsäure kann unter Umständen als Weinstein (Kaliumhydrogentartrat) ausfallen. Unter welchen Umständen es zur Fällung kommt ist unter andrem abhängig von pH, Alkoholgehalt, Konzentrationen der organischen Säuren inkl. Weinsäure, der Zucker, des Kaliums und der Temperatur. Für einen bestimmten Wein reduziert sich diese Abhängigkeit auf die Temperatur. Die Analyse dient der Berechnung dieser Sättigungstemperatur um bei Bedarf den Wein vor Abfüllung zu behandeln, dass unter nomalen Lagerungsbedingungen keine Weinsteinausfällungen zu erwarten sind.

The tartaric acid contained in wine can, under certain circumstances, precipitate as cream of tartar (potassium bitartrate). The conditions under which precipitation occurs depend, among other things, on pH, alcohol content, the concentrations of organic acids (including tartaric acid), sugars, potassium, and temperature. For a given wine, this dependence is reduced to temperature. The analysis serves to calculate this saturation temperature so that, if necessary, the wine can be treated before bottling to prevent cream of tartar precipitation under normal storage conditions.

Je nach Art des Getränkes unterliegt der Zuckergehalt gesetzlichen Vorgaben, sodass bestimmte Minimal- bzw. Maximalgehalte eingehalten werden müssen, sodass eine Kontrolle der Zuckergehalte unerlässlich ist. Zusammengefasst wird der Gehalt an Zuckern in einem Produkt meist mit den beiden Parametern Zucker vor und nach Inversion, wobei analytisch auch jede Zuckerart einzeln bestimmt werden kann.In almost all beverages, whether non-alcoholic or alcoholic, varying amounts of different sugars are present, which are generally characteristic of the respective product. Sofern in einem Produkt, wie beispielsweise bei Schaumweinen, neben Glukose und Fruktose auch Saccharose vorkommt, wird der Gesamtzuckergehalt ausgedrückt als Zucker nach Inversion. Unter Inversion versteht man die Spaltung des Disaccharids Saccharose in die entsprechenden Monosaccharide Glukose und Fruktose. Zur Berechnung des Zuckers nach Inversion wird der Gehalt an Glukose und Fruktose, der sich durch Inversion der Saccharose erzeugen ließe, zur Summe der vorhandenen Glukose und Fruktose addiert.If a product, such as sparkling wine, contains sucrose in addition to glucose and fructose, the total sugar content is expressed as sugar after inversion. Inversion refers to the cleavage of the disaccharide sucrose into the corresponding monosaccharides glucose and fructose. To calculate sugar after inversion, the amount of glucose and fructose that would be generated by inversion of the sucrose is added to the sum of the existing glucose and fructose.

Über den Gesamtzuckergehalt in Weinen und Schaumweinen ergibt sich die jeweilige Geschmacksbezeichnung, die auf dem Produkt angegeben werden darf bzw. muss. Aus diesem Grund ist das Wissen des Zuckergehaltes für die Charakterisierung eines Weines unerlässlich. Neben der Zuordnung der Geschmacksangabe kann über das Verhältnis von Fructose und Glucose bzw. das Vorhandensein von Saccharose in einem Wein eine Anreicherung sowie eine unerlaubte Süßung mit Zucker nachgewiesen werden.The total sugar content of wines and sparkling wines determines the taste designation that may or must appear on the product. Knowledge of the sugar content is therefore indispensable for the characterisation of a wine. Beyond assigning the taste designation, the ratio of fructose to glucose and the presence of sucrose in a wine can be used to detect enrichment as well as unlawful sweetening with sugar.

SaccharoseSucrose

Saccharose zählt zur Gruppe der Zucker und ist ein Disaccharid. In den Rohstoffen eines Weines, also den Trauben bzw. dem Most kommen nur sehr geringe Gehalte an Saccharose vor, da die Rebe den Zucker in den Trauben in Form von Glukose und Fruktose einlagert. Jedoch kann dennoch im Most dieser Zucker in größeren Mengen vorkommen, da die Zugabe zur Erhöhung des Alkoholgehaltes (Anreicherung bzw. Chaptalisation) bis zur Qualitätsstufe der Qualitätsweine in Weinbauzone A erlaubt ist. Diese invertiert im Most zu Glukose und Fruktose, welche anschließend zu Alkohol vergoren werden. Das heißt, dass diese vermehrt den Glukoseanteil verstoffwechselt. Daher liegt nach der Vergärung eines Mostes im verbleibenden Zuckerrest mehr Fruktose vor. ArabinoseArabinose

Arabinose ist ein natürlich vorkommendes Monosaccharid, der aus fünf Kohlenstoffatomen besteht. Die Pentose Arabinose kommt in geringen Mengen im Traubenmost und somit auch im Wein vor. Arabinose ist genauso, wie die anderen Pentosen durch Hefen unvergärbar. Milchsäurebakterien können Arabinose verwerten, dabei entsteht Milchsäure und Essigsäure. Die Gesamtmenge der Pentosen liegt in Rotweinen und Pressweinen höher als in Weißweinen, da Pentosen überwiegend in Schalen und Stielgerüsten angereichert sind. Im Wein liegt der Gehalt an Arabinose unter 1 g/l. Übersteigt die Gesamtpentosemenge 2 g/l, so ist dies ein Hinweis auf Zusatz von Fruchtweinen.Arabinose is a naturally occurring monosaccharide consisting of five carbon atoms. Rhamnose ist eine methylsubstituierte Pentose, welche im Traubenmost sowie im Wein in einer Konzentration von bis zu 400 mg/l vorkommen kann. Wie Arabinose und Xylose kommt auch die Rhamnose als Bestandteil in Zellwänden vor. Daraus wird sie durch Einwirkung fruchteigener Enzyme und bei Befall von Schimmelpilzen (z.B. Botrytis) durch deren hydrolytisch wirksame Enzyme aus den polymeren Substanzen freigesetzt. Genauso wie die Arabinose kann auch die Rhamnose von den Hefen nicht vergärt werden.Rhamnose is a methyl-substituted pentose that can occur in grape must and wine at concentrations of up to 400 mg/l. Like arabinose and xylose, rhamnose is also a component of cell walls, from which it is released by the action of fruit-endogenous enzymes and, in the case of mould infection (e.g. Botrytis), by the hydrolytic enzymes of those moulds. XyloseXylose

Xylose, auch Holzzucker genannt, da sie u.a. im Holz der Buche und Fichte vorkommt, ist ein Monosaccharid (Einfachzucker) mit fünf Kohlenstoffatomen (Pentose ebenso wie Arabinose, Rhamnose und Ribose), der im menschlichen Organismus nicht verstoffwechselt wird. Xylose gilt als nicht oder nur kaum vergärbar. Xylose ist im Wein nur in sehr geringen Mengen vorhanden.Xylose, also known as wood sugar because it occurs in, among other things, the wood of beech and spruce trees, is a monosaccharide with five carbon atoms (a pentose, like arabinose, rhamnose and ribose) that is not metabolised in the human body. Xylose is considered non-fermentable or only barely so. Xylose is present in wine only in very small amounts.

Gluconsäure entsteht durch Oxidation von Glucose durch Botrytis cinerea (Grauschimmel). Gesundes Lesegut enthält < 300 mg/l; bei stark fauligen Trauben sind Werte über 1 g/l möglich. Sie ist damit ein verlässlicher Indikator des Traubengesundheitszustandes. Galacturonsäure ist Baustein des Pektins und entstammt dem Pektinabbau; sie kommt natürlich in Traubensaft und Wein vor.

Gluconic acid is formed by oxidation of glucose by Botrytis cinerea (grey mould). Healthy harvest material contains < 300 mg/l; with heavily mouldy grapes, values above 1 g/l are possible. It is therefore a reliable indicator of grape health status. Galacturonic acid is a building block of pectin originating from pectin degradation; it occurs naturally in grape juice and wine.

Bei der chemisch-technischen Synthese von Glycerin entstehen verschiedene Nebenprodukte, wie Zyklischen Diglyzerine und 3-Methoxy-1,2-propandiol (3-MPD), wobei der Nachweis dieser Verbindungen in Weinen als Indiz für den unerlaubten Glycerin-Zusatz gilt. Werden diese Verbindungen in Weinen nachgewiesen, so sind dieser folglich als nicht verkehrsfähig zu beurteilen. 3-MPD kann im Wein in geringen Mengen durch zulässige Enzymbehandlungen vorkommen, deswegen wurde ein sogenannter Eingreifwert für 3-MPD in Höhe von 0,1 mg/l festgelegt. Der Eingreifwert findet jedoch nur Anwendung, wenn der Einsatz glyzerinhaltiger Enzympräparate erfolgt ist.

During the chemico-technical synthesis of glycerin, various by-products are formed, such as cyclic diglycerides and 3-methoxy-1,2-propanediol (3-MPD), whereby the detection of these compounds in wines is considered an indication of unauthorized glycerin addition. If these compounds are detected in wines, they must consequently be assessed as not marketable. 3-MPD can occur in wine in small amounts through permissible enzyme treatments; therefore, a so-called intervention value for 3-MPD of 0.1 mg/l has been established. However, the intervention value only applies if glycerin-containing enzyme preparations have been used.
